Another Night of Breakfast

We enjoyed having some friends over for dinner tonight and decided to have breakfast for dinner once again. Way back in the day when Chris and I were rockin’ the newly wed life, we served in our local church by participating in Breakfast Club. Emilio and Molly weren’t ever there, but we always got an awesome breakfast before mopping floors and straightening aisles. This evening’s meal was a straight lift from those Saturday mornings of long ago.

Whole Wheat Pancakes + Apples

  • 1 c whole wheat flour
  • 1 T brown sugar
  • 2 t baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 c milk
  • 2 T oil
  • 1 thinly sliced cored apple

Blend dry ingredients in a medium mixing bowl. In a small bowl, slightly beat egg. Add milk and oil to egg, mixing to combine, then pour into flour mixture and stir until blended. Place thinly sliced apple pieces on a hot griddle and pour 1/4 c batter over a couple of slices. If you like cinnamon, add a dash on top of the apples before you add the batter. Cook over medium heat (300 degrees-ish) until the edges of your pancakes are set . Turn the pancake and cook 2-3 minutes more or until the bottom is golden brown.

Serve with hot eggs, lots of apple butter or syrup and a sausage patty or two.
