So we tallied our spending for the month on Friday evening. We felt great having spent only $168 for the month so far. So Saturday we took a spur of the moment trip to a local u-pick farm. Whoops! There goes $32 in produce and $12 in fun. At least we had a good time? So we’re recovering this week by not spending…well, not spending anything but the essentials.
Last night we had leftovers from our week’s meals. Tonight we’re going to try pumpkin donuts…I’ll give you the recipe once I find out that it works! If it bombs, I’m sure you won’t want it.
But what to do with all those apples? Apple Butter of course.
Core as many apples as will fit in your crockpot. I have a larger pot and it holds in the range of 10-12 medium sized apples. Turn the slow cooker on low on let your apples go for 10-12 hours or until they’re very tender. Add roughly 1 1/2 cups sugar, a couple of tablespoons of cinnamon, 1/2 tsp cloves, 1/2 tsp allspice, 1/2 tsp nutmeg, 1/4 tsp ginger. Or pumpkin pie spice. Blend your apples until smooth–I use an immersion blender, but you can remove the apples from the crock and use a blender as well. Adjust sugar and spices to taste.
A full slow cooker will make 1/2 gallon of apple butter.
