Baby Friendly Lentil Patties

Nora is a skinny minny and something of a picky eater. She loves a peach, but turns her nose at eggs. So finding things that contain a significant amount of calories that she’ll actually eat is a daily game. We had lentil loaf the other evening, and I used some of the ingredients for our dinner to whip some baby lentil patties up. She actually ate them!

 

Baby Lentil Patties

  • 1/3 cup soft-cooked lentils
  • 1-2 T bulgur or rice
  • 1-2 T oatmeal
  • 2 T shredded carrot
  • 1 egg yolk

Squish everything up together until you get a nice consistency of goop that holds together. Drop by tablespoons onto a hot griddle and flatten into a patty. Cook on medium heat for 2-3 minutes per side or until golden brown.

Nora dug these and J liked them even more. Because I omitted the egg white, the patties didn’t hold together nearly as well as other veggie patties I make, but it worked okay!
